There is a club inside IL BORGHETTO – “La stanza del Duca” (The Duke’s Room) – whose sole purpose is to let our guests know of our dishes, cooked according to local traditional Tuscan cuisine and a selection of fine Tuscan wines.
For us dinnertime is not only a moment in which to offer our guests our typical cuisine but also an occasion to get to know each other better, exchange opinions in front of tasty typical dishes expertly cooked by “Mamma Silvana” helped by other chefs. We are very pleased to give you a description of the preparation of our dishes but the best way to appreciate them is to taste them because a lot depends on who cooks and a lot depends on the fresh products used according to the season, therefore also the recipes change according to the period of the year and the products that are available at that moment. We always offer a fixed menu for dinner and it is different every evening, made up of assorted starters, a first course of pasta, a second course of meat and vegetables, and dessert. As regarding the wines, you will find a vast assortment in our wine list. Our starters are always a taste of typical local products, grown and produced in the Tuscan farms which dot our countryside, such as salamis and cheese accompanied by crostini (toasted rounds of bread) or “bruschette” (garlic bread) Our first courses vary from the most simple recipes such as pasta with freshly-picked tomatoes and basil or with the vegetables in season, to more traditional recipes such as tagliatelle with a meat sauce or mushrooms or the “zuppa di pane” (bread soup), pasta with saffron, fresh home-made pasta such as ravioli, lasagne, “pici”, pancakes served with various kinds of meat and vegetable sauces. As a second course we propose various kinds of meats such as chicken, pork, veal, wild boar, rabbit either grilled or cooked in a pan with herbs. Each second course is accompanied by vegetables going from the traditional roast potatoes, green peas, assorted grilled, sautèd or fried vegetables to vegetable flans with artichokes or spinach, varying according to what is freshly growing in our Tuscan countryside at the time. The desserts ending our dinner are: fresh fruit salad with ice-cream, fruit mousse, “panna cotta”, “tiramisù”, amaretto cream, fruit tarts, sorbets of various flavours.
